My husband and I will be seeing the Beach Boys in concert

this coming weekend. Looking forward to re-living those 

awesome 60 - hits. People say they still got it. Several original members are

deceased and others have come and gone, but never the less, I will

be tapping my toes! Praying for no rain, it is an outside concert!

Cheddar and Bacon Potatoes

These sound a little involved and time

consuming, but good!

4 Medium Potatoes, scrubbed
2 Tablespoons Butter
1/2 Cup Bell Pepper, chopped
1/3 Cup Onion
1 Cup thinly sliced Fresh Mushrooms
1/4 Cup cooked Bacon Pieces
3/4 Cup Cheddar Cheese, divided
1/4 cup Milk
 
Pierce potatoes several times with a fork. Microwave on High until tender, about 10 minutes. While those cook, melt butter in a large skillet over medium heat. Saute bell pepper and onion in the butter for 2 minutes. Add Mushrooms and bacon to skillet. Cook about 2 Minutes, remove from heat.
Slice of tops of potatoes, Scoop out the meat of the potato, leaving the Shell intact. Mash the scooped out potato, 1/2 cup of the cheese and milk in a large bowl.  Stir in the saulted vegetables. Spoon potato mixture into the potato shells. Place on baking sheet. Sprinkle with remaining cheese. Bake until potatoes are heated through and cheese is melted, about 15 minutes.
