THE EAGLES & their nest

We received this a few days ago from a friend that receives my Daily Dose - and to her I say "thank you".  She suggested you readers might enjoy. I have been watching since we got it, and just can't seem to get away from it. The nest is located in Decorah, Iowa, 80 ft up in the tree. As of this post two of the three eggs have hatched. I have my laptop in our living room with the site open during our waking hours. Take a peek, as the Eagle is a most interesting and amazing bird - not to mention what it stands for in our country.

Easy Ground Beef Casserole with Potatoes

1 to 1 1/2 pounds lean ground beef, browned

1/2 cup chopped onion
salt and pepper
3 large potatoes, sliced
2 Carrots, shredded
1 can cream of mushroom soup
1 cup shredded Cheddar cheese

Brown ground beef in a skillet with chopped onions; cook until onions

are tender. Drain off excess fat; transfer ground beef and onion to
casserole dish.

Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred

carrots to cover potatoes. Put soup over carrots.

Bake at 350 for 40 to 50 minutes, or until potatoes are tender.


Sprinkle shredded cheese over top and bake for about 5 minutes longer,

or until cheese is melted.

Serves 4 to 6.
