Today is President's Day

Originally intended to celebrate the birthday of the

first US President, George Washington, the

President's Day holiday has become a

general celebration of all past US Presidents.

Potato Dipped Oven Chicken

Instant potato flakes

(measure out enough flakes for 2 servings)

2 tablespoon grated Parmesan cheese

1 teaspoon seasoned salt

1 egg

4 boneless, skinless chicken breasts

1/4 c. butter or margarine

Dash pepper

Preheat oven to 400 degrees.  Mix potato flakes, cheese, seasoned

salt and pepper.  Beat egg with 1/4 cup water until mixed.

Dip chicken in egg mixture; coat with potato flake mixture.

In a pan, melt butter. Arrange chicken in pan turning over

to coat with butter.  Bake 40 to 50 minutes until fork tender.
