Today I kick off my holiday Daily Doses.

Determined to brighten the darkest month of the year,
people since ancient times have created festivals
of light and ceremonies of renewal.

This year, Christmas Day—December 25—falls on a Sunday.
Here is a short review of
Christmas Day history.

The 8-day festival of
Chanukah begins at sundown on the 20th,
and the Winter Solstice follows on the 22nd.

The month of
December has long lost its original meaning
of “ten” (decem), for the old Roman calendar’s
tenth month, and now is more synonymous with “decorate.”

The Yule log, evergreens,
colored glass ornaments, wassail bowl—all
of these have antecedents lost in time but
are designed to make the season bright.

It’s possible that more
cookies are baked this month than
in all other months combined, and we’re certain that
more eggs are nogged, more holiday plants bloom, more
greeting cards are addressed, and more snowflakes are cut out of paper.

December has 31 days

A Christmas Greeting For You













Microwave Peanut Brittle


1 c. sugar
1/2 c. white corn syrup

Mix together in 1 1/2 quart casserole and microwave on high 4 minutes. Add: 1 c. roasted, salted peanuts You may use raw peanuts if you add 1/8 teaspoon salt to sugar mixture before cooking. After adding peanuts, microwave on high 3 to 5 minutes, until light brown.

   Now add:
1 tsp. butter
1 tsp. vanilla

Blend well. Microwave on high 1 to 2 minutes more. Peanuts will be lightly brown and syrup very hot. Add:
1 tsp. baking soda

Stir until light and foamy. Pour mixture onto lightly greased cookie sheet, or buttered non-stick coated cookie sheet. Let cool, then break into small pieces and store in air-tight container. Makes about a pound.
