Baked Potato Soup
8 baked potatoes
1/2 cup butter
8 cups milk
1/2 cup flour
1/4 cup chopped onions
1/2 cup shredded cheddar cheese
8 oz. sour cream
1/2 lb. crispy bacon, crumbled
Salt n Pepper to taste
1. Bake potatoes
2. Melt butter in large pot, and cook chopped onion till transparent.
Whisk in flour (add more butter if needed) until smooth...gradually
stir in milk (I used a couple cups of half & half too). Bring to a boil
stirring constantly...reduce heat and simmer until slightly thickened.
Keep stirring while simmering.
3. When potatoes are done baking....cut into cubes and add to mixture.
Stir in sour cream and cheddar cheese until blended. If you want
more cheese or sour cream, feel free to add. I did.
4. Add bacon to soup or let each person add their own.
Now taking orders for the holidays.

I hope everyone had a wonderful Thanksgiving. Ours was very nice,
my dinner turned out great - and I don't know what I would do if my
hubby did not help out - he is really good about that.
Can't believe this month is about over. I will welcome in the
Christmas season on Thursday. I like to take the time between
Thanksgiving and December 1st and use it as time to reflect.
