Calendar Today by Lois
I believe in animal rights, and high
among them is the right to the gentle
stroke of a human hand.
~Robert Brault
Animals are such agreeable friends - they
ask no questions, they
pass no criticisms.
~George Eliot
If all the beasts were gone, men would die
from a great loneliness of spirit, for whatever
happens to the beasts also happens to the man.
All things are connected. Whatever befalls the
Earth befalls the sons of the Earth.
~Chief Seattle
An animal's eyes have the power to
speak a great language.
~Martin Buber
Animals have these advantages over man:
they never hear the clock strike, they die without
any idea of death, they have no theologians to
instruct them, their last moments are not disturbed
by unwelcome and unpleasant ceremonies, their
funerals cost them nothing, and no one
starts lawsuits over their wills.
~Voltaire, letter to Count Schomberg
Old Gas Stations from the 20's

Dome Gas?! It's better? That is what the sign says.
I guess it better be good since they want 23 cents a gallon
for it! And one would wonder why that tank car is all by
itself on the trestle? Wonder if Hercules
Petroleum Co lost it? :)
Just rambling .....
Carrots Au Gratin
4-1/2 cups sliced carrots
2/3 cup crushed buttery, round crackers
3 tbsp. butter or margarine, melted
1/2 cup chopped onion
3 tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. ground black pepper
1-1/2 cups milk
2/3 cup shredded processed cheese
Heat oven to 350º F (175º C).
Place carrots in a steamer over 1" boiling water; cover.
Cook until tender, but still firm, 6 - 10 minutes. Drain.
Meanwhile, in a small bowl combine crushed crackers with 1 tbsp. melted butter. Mix well, set aside. In a medium skillet over low heat, heat remaining 2 tbsp. butter, sautè onions until tender. Stir in flour, salt and pepper. Cook a few minutes, stirring to prevent browning. Gradually pour in milk, stirring constantly. Increase heat to medium, cook until bubbly and thickened. Add cheese, stir until smooth. Fold in carrots. Pour mixture into a 9x12" baking dish, sprinkle with crumb mixture. Bake 20 minutes, or until bubbly, golden brown.
