Dome Gas?! It's better? That is what the sign says.
 I guess it better be good since they want 23 cents a gallon
for it! And one would wonder why that tank car is all by
 itself on the trestle? Wonder if Hercules
Petroleum Co lost it? :)

Carrots Au Gratin



4-1/2 cups  sliced carrots
2/3 cup       crushed buttery, round crackers
3 tbsp.        butter or margarine, melted
1/2 cup       chopped onion
3 tbsp.        all-purpose flour
1/2 tsp.       salt
1/4 tsp.       ground black pepper
1-1/2 cups   milk
2/3 cup       shredded processed cheese


          Heat oven to 350º F (175º C). 
Place carrots in a steamer over 1" boiling water; cover. 
Cook until tender, but still firm, 6 - 10 minutes.  Drain. 
Meanwhile, in a small bowl combine crushed crackers with 1 tbsp. melted butter.  Mix well, set aside.  In a medium skillet over low heat, heat remaining 2 tbsp. butter, sautè onions until tender.  Stir in flour, salt and pepper.  Cook a few minutes, stirring to prevent browning.  Gradually pour in milk, stirring constantly.  Increase heat to medium, cook until bubbly and thickened.  Add cheese, stir until smooth.  Fold in carrots.  Pour mixture into a 9x12" baking dish, sprinkle with crumb mixture.  Bake 20 minutes, or until bubbly, golden brown.
